So, it’s March Madness, and everyone around us is getting into the excitement of basketball playoffs and spring time. You may be hosting a spring gathering or may just want a quick and easy recipe to make for dinner so that you can spend time outside. The American Dietetic Association has published a group of recipes on their website in honor of National Nutrition Month®.
Here are a few of their suggestions:

- Savory roasted salmon and green beans–contains only 5 ingredients! You can marinate the salmon before work, and it takes only 20 minutes to cook–a great work-night meal.
- Philly soft pretzel bread pudding with chocolate–simple ingredients, but takes about 1 hour of set time plus 1 hour to cook. This recipe sounds like a fun idea for a children’s party.
- Lime chicken with black bean sauce–an easy recipe once you marinate the chicken for an hour, as the chicken takes only 10-15 minutes to grill.
- Cornbread–a great recipe for any time of the year, using fat free milk and egg substitute for a healthier bread.
- Pasta primavera–another great weeknight meal; it’s a lite pasta dish with lots of vegetables, only 225 calories a serving, packed with fiber and some protein.
- Fresh Fruit Clafouti–an easy-to-make, fruity cake-like dessert that seems great as summer draws near; less than 100 calories per serving!
- Farmer’s market vegetable, beef and brown rice salad–marinate the beef during your work day to save time; takes about an hour to make; packed full of vegetables. See, you CAN eat beef and still eat healthfully!
